The Ritz-Carlton Yacht Collection has unveiled culinary offerings aboard Ilma, its second ultra-luxury superyacht. Slated to set sail on its inaugural voyage from Monte Carlo to Rome on September 2, 2024, Ilma will offer guests five dining venues, a refreshed in-suite dining program, seven bars and a signature wine vault.
New highlights include Seta su Ilma by Chef Fabio Trabocchi, a modern Italian fine-dining restaurant, and the Beach House, an open-air eatery serving a Pan-Latin and Caribbean menu created in collaboration with Chef Michael Mina. Notably, this marks both Chef Trabocchi’s and Chef Mina’s first ventures at sea.
Seta su Ilma’s seasonal tasting menus will offer a contemporary interpretation of Italian cuisine. Dishes will range from seafood to homemade pasta, all paired with wines. Seta su Ilma will welcome diners each evening with a seven-course tasting menu, while on select afternoons, lunch with a five-course tasting menu will also be offered. This specialty dining experience aboard the yacht is exclusively available to guests for an additional fee, with an optional wine pairing available.
At the Beach House, airy interiors will flow into an outdoor pool deck. Guests can enjoy Pan-Latin cuisine alongside craft beers, wines and tequilas. The menu, developed in collaboration with James Beard Award-winning chef Michael Mina, will be inspired by the flavors of South and Central America while highlighting ingredients from the Caribbean with light, shareable bites. Guests at the Beach House can enjoy lunch and dinner, as well as signature brunch events, enhanced by lively programming including Latin-inspired live music, percussionists and nightly rituals.
In addition to these two new culinary concepts, Ilma will house Memorī, Mistral and Tides. Anchored by an open 12-seat sushi bar, Memorī will bring a modern spin to Pan-Asian cuisine. A selection of sake, champagne, Japanese whiskeys and plum wines will accompany the dishes. Located just steps from the main pool on Deck 10, Mistral is an indoor-outdoor venue ideal for a casual lunch, romantic dinner or cocktail overlooking the water. Lastly, Tides will offer seasonal menus inspired by the diverse regional flavors and techniques of the destinations that Ilma explores. Nestled behind Tides and Seta su Ilma, Dining Privée will provide an intimate enclave for celebratory dinners and other special events, which can be arranged for an additional fee.
At the heart of Ilma will sit The Living Room, where guests can greet the day with freshly roasted coffee and baked pastries at the espresso counter each morning. As the day progresses, The Living Room Bar will offer specialty cocktails, fine wines and champagne accompanied by a live pianist. In the evening, it will transform into an ideal spot for enjoying canapés and an aperitif before dinner followed by late-night entertainment. Guests can also opt for In-Suite Dining options. These menus encompass breakfast, all-day and evening selections from the different onboard restaurants.
Reservations for Evrima, Ilma and Luminara are now open. The superyachts are also available for private charter.
