Windstar Cruises has announced that Chef Andy Ricker will be the new guest chef aboard The James Beard Foundation Culinary Collection Icons of Southeast Asia cruise. The 14-day journey departing January 20, 2018 travels from Hong Kong to Bangkok exploring the food of the region. He is replacing Chef Lee Anne Wong who had to cancel due to a family emergency.
Ricker is the chef/owner of Pok Pok Restaurants, which has locations in Portland and New York. He visited Thailand during a backpack trip in 1987 and fell in love. Since then, he has spent several months each year living, traveling, and learning about the food of Thailand and neighboring countries including Vietnam.
He is also a two-time James Beard Award winner and best-selling cookbook author.
Windstar’s James Beard Foundation cruises allow guests to taste recipes from some of the best chefs in the world. Specially made recipes from chefs will soon be featured not just on Culinary Collection cruises, but all cruises in the Windstar line.
AmphorA, the main dining room on each Windstar ship will host the James Beard recipes each evening. The new menus are rolling out to all Windstar ships by the end of the year and are currently available on Star Pride, Star Legend will soon follow. Each dinner menu has two featured recipes from a James Beard-affiliated chef – either a starter, entrée, or dessert. The items are notated on the menu, and no additional fees will be added.
