This fall, Bellagio Resort & Casino and Major Food Group will open CARBONE Riviera, a new restaurant under the CARBONE brand. Located beside the Fountains of Bellagio, it will offer a seafood-focused menu.
CARBONE Riviera was created by Major Food Group co-founders Mario Carbone, Jeff Zalaznick, and Rich Torrisi, in partnership with MGM Resorts International. The restaurant builds on the CARBONE brand’s Italian-American menu and focuses on seafood. It is located in the former Picasso space at the Bellagio in Las Vegas.
Designed by the internationally renowned Martin Brudnizki, CARBONE Riviera opens with a grand seafood display—an ice-laden centerpiece showcasing delicacies flown in daily from global purveyors. The display includes whole Dungeness and king crabs, oysters, langoustines, sea urchin, razor clams, and other seafood.
At the center of the experience is a whole fish program, executed with CARBONE's signature ceremony. From salt-baked branzino to grilled Dover sole, each preparation is presented tableside by captains trained in the brand's style of theatrical yet refined service. The vast and varied menu will also include Chef Mario Carbone’s Spicy Lobster Meatballs and a selection of pastas, including a two-pound Lobster Pasta and the Spicy Rigatoni Vodka.
Bellagio is also set to debut a luxury Riva mini yacht. The 33-foot open powerboat, part of the Riva “Anniversario” collection, is one of only 18 produced. For the first time in the resort’s history, guests can ride aboard the yacht on Bellagio’s Lago di Como while enjoying front-row views of the Fountains of Bellagio.
