Capella Singapore has announced its partnership with renowned chef Mauro Colagreco to unveil a new restaurant concept slated to open its doors later this year at the resort. Chef Colagreco is the chef-owner of the three-Michelin-starred restaurant Mirazur. He has a long list of accolades, including the establishment of Côte by Chef Mauro in Capella Bangkok in 2020, which was recently awarded a Michelin star in December 2021.
The cuisine of the new restaurant concept will be influenced by Chef Colagreco’s vision and his life’s influences. The restaurant will also honor Chef Colagreco’s commitment to the environment.
“I’m excited to continue the collaboration with Capella Hotels with this new tailor-made concept for Capella Singapore,” said Chef Mauro in a press note. “This new venture has been imaged by my life’s influences, mixing our know-how, our creativity and the taste for the good things that we’ve in common with Capella Singapore.”

Coming later this year, Chef Colagreco’s new restaurant will be situated where The Knolls is currently located. In preparation of the launch, the all-day restaurant offering Mediterranean-inspired dishes will be closed from January 12, 2022. Guests at Capella Singapore will continue to enjoy breakfast at the Gallery Room while Bob’s Bar will serve an all-day dining menu.
Capella Singapore is situated within 30 acres of lush rainforest on Sentosa Island and is one of the most luxurious hotels in the region.
