Lots is happening with The Dorchester Collection’s hotels in the U.K., including plenty on the culinary side. Here’s the latest:
45 Park Lane
The Mayfair hotel 45 Park Lane will reopen its al fresco terrace CUT Out on April 12, 2021, serving dishes from Wolfgang Puck’s CUT and cocktails from BAR 45. Overseen by executive chef Jamie Shears, CUT Out will be open every day from noon to 11 p.m. with tables for up to six guests.
Highlights from the menu include: Cornish Sole à la Meunière; Korean Style Lamb Rack & Bulgogi; and Porthilly Rock Oysters with CUT Hot Sauce. CUT’s celebrated steak selection will also be available with the addition of Wagyu beef from Suffolk and Ribeye from Hereford. Guests can also enjoy BAR 45’s signature negronis (served from the outdoor Negroni Bar), including bar manager Francesco Orefici’s new addition, the London Negroni using gin, “vermouth and rosehip bitters distilled in London.
To celebrate the annual Academy Awards on Sunday April 25, CUT Out will be serving Wolfgang Puck’s smoked salmon pizza with crème fraiche and caviar, usually served to Hollywood legends at the official Oscars dinner. Francesco’s Oscars-inspired Shallow Negroni will also return to the menu and will be available from the Negroni Bar.
Coworth Park
Coworth Park, located on 240 acres of Berkshire parkland and just 45 minutes by road from Central London, is also reopening its outdoor dining on April 12. The Barn terrace provides “relaxed rustic dining” with views over the estate bridge, while the Drawing Room terrace overlooks the meadow and rose garden. Good to know: Anticipating the British weather, both terraces are covered, with blankets and heaters for chillier evenings. Both venues will be offering a new selection of menus.
The Barn will offer a brasserie-style menu, which changes seasonally; signature staples, however, include The Barn burger with sticky short rib, cheddar, a brioche bun and chunky chips; Coworth Park beer-battered haddock, chunky chips and minted peas; and Coworth Park chocolate mousse with hazelnuts, salted caramel and praline ice cream. The Drawing Room’s all-day menu includes classic British dishes like Coworth Park sausage roll with piccalilli; salt-aged Waterford beef fillet with horseradish potato, spring vegetables and red wine sauce; and sticky toffee pudding with vanilla ice cream.
Good to know: Launching on May 17, Coworth Park has unveiled a new three-bedroom private stand-alone gatehouse cottage. North Lodge at Coworth Park has a private driveway, three bedrooms, a lobby, dining room and kitchen. Guests can also make use of their own private garden with an outdoor dining area.
The Dorchester
For the first time in its nine-decade history, The Dorchester ill launch a rooftop restaurant and bar, The Dorchester Rooftop. With views across Hyde Park and East London, it will showcase a series of culinary pop-ups overseen by executive chef Mario Perera and highlighting The Dorchester’s chefs, celebrating British, French and Mediterranean cuisine. The Dorchester Rooftop will be open throughout spring and summer and will be open daily for lunch and dinner, with a lounge area to relax with a cocktail, glass of Champagne or a cigar while listening to a live band and DJ. Tip: Terrace umbrellas, heaters and blankets will be available.
Starting with head chef at The Grill at The Dorchester, from Monday, April 12 to Sunday, April 25, Tom Booton will introduce a British summertime menu showcasing locally sourced produce. Highlights from Tom’s menu concept include: Ribeye with mushrooms and tarragon; prawn Scotch egg with curry sauce; and barbecued leeks with ricotta and salsa Verde.
Bringing relaxed Parisian chic to the rooftop, executive chef of Alain Ducasse at The Dorchester, Jean-Philippe Blondet will introduce a modern, light and elegantly informal pop-up with a menu of bites from Monday, April 26 to Sunday, May 9. Guests can expect hummus, seaweed crisp and lemon confit; grilled octopus, confit pepper and grapefruit; and native lobster, spiced avocado and shiso leaves.
Further pop-ups will be announced later in the year. The Dorchester Rooftop will be open daily from noon to 1 a.m.
In addition, located on the hotel’s forecourt, The Dorchester Terrace & Garden is serving an all-new cocktail menu by The Bar at The Dorchester’s team, led by cocktail legend Giuliano Morandin, who celebrates his 40th year at the hotel this year. The Dorchester Terrace & Garden has just seven tables of two. Surrounded by lush greenery, guests can enjoy classic Italian bites, such as truffle arancini and calamari frittura, paired with experimental cocktails, including the Malt Fig Sour made using 10-year-old Glenmorangie shaken with lemon juice and fig liqueur.
Nestled under The Dorchester’s plane tree, The Spring Garden has two private garden globes, which seat up to five guests each. Guests can enjoy private-dining menu by executive chef Mario Perera in partnership with Veuve Clicquot. The spring-inspired three-course menu celebrates the best of British and includes Scottish Diver scallops ceviche; blue lobster and Wye Valley asparagus; and The Dorchester coulibiac.
