Fairmont Olympic Hotel has announced the opening of its new signature restaurant, The George. Helmed by Thomas Cullen, restaurant executive chef, the outlet offers a brasserie-inspired menu and an extensive bar program. The opening marks the completion of the hotel's two-year renovation project.
The George pays homage to the building’s original architect George B. Post. The interiors have been redesigned by the Spanish design studio Lázaro Rosa-Violán, which also undertook the hotel’s broader restoration. The redesigned 4,500-square-foot restaurant offers 100 seats with an additional 20 seats at the newly built bar and lounge, and a private dining room for 12. The restaurant is more accessible with the addition of a dedicated street entrance at 5th Avenue and Seneca Street.
According to Sunny Joseph, general manager at Fairmont Olympic, “This moment has been long in the making as we finally peel back the curtain on our new signature restaurant and celebrate the culmination of the hotel’s extensive, two-year restoration project.”
Backed by his expansive two-decade career, Chef Cullen draws inspiration from his connection to the Pacific Northwest and commitment to quality ingredients and sustainability. Seafood is sourced from local waters, while dry aged meats are sourced from farms across the state. Artisan cheeses are provided by local dairies, and seasonal fruits and vegetables hail from local farmers and sustainable foragers.
Jesse Cyr, Fairmont Olympic’s beverage curator has recreated an extensive bar program that also spotlights the Pacific Northwest, highlighting spirits from local distilleries and around the world. Besides cocktails, the beverage program offers a selection of local and domestic beers, and a wine list featuring a by-the-glass program showcasing Cascadia winemakers.
The George is open for dinner service from 5 p.m. to 9:30 p.m. (Tuesday through Thursday), and from 5 p.m. to 10:30 p.m. (Friday and Saturday). Starting April 14, breakfast will be served from 6:30 a.m. to 11 a.m. (Monday through Friday). Weekend brunch will be offered from 7p.m. to 2 p.m. (Saturday and Sunday).
