The First Roma Arte, the hotel by The Pavilions Hotels & Resorts in a restored 19th century palace near Rome’s Piazza del Popolo, has reopened its rooftop terrace, AcquaRoof. The redesigned space now offers an open concept with a contemporary demonstration kitchen beneath the new roof to put food and drink preparation center stage year-round.
The new food and cocktail menus were developed by Executive Chef Angelo Troiani to meld seafood with Italian wines and spirits. Troiani co-founded the AcquaRoof concept.
“AcquaRoof Chef Claudia Ceppaluni masterfully prepares the creative fare that marries well with the inventive libations crafted by AcquaRoof Bar Manager Valeria Bassetti,” said AcquaRoof General Manager Valerio Albrizio.
Menu highlights include Gambero Rosso al Rémy Martin XO, red shrimp flambéed with cognac and hazelnut cream; Alstice all Catalana della Tradizione, a traditional Catalan Lobster; and Tortellino Bloody Mary, a pasta dish that integrates the flavors of a Bloody Mary cocktail.
From the libations menu are such highlights as Afrodite (Tutti Pazzi Per), a cocktail made with organic Tuscan VKA vodka, and Pocco Mosso, a drink that is low in alcohol and contains Molinari, grapefruit juice, citrus infused soda, fresh lime and Mediterranean salt and pepper. Tasting menus are also available for the table.
The goal of the redesign was to transform the space, with its 360-degree views of Rome, into a luxury restaurant that could be enjoyed year-round. The reopened space now has a versatile roof covering that provides shelter throughout the year without intruding on city sightlines. Bronze-finished mirrors reflect the city and a marble monolith crafted as furniture integrates all of the kitchen’s technical equipment where guests may sit and view what the Chefs are preparing.
For every dining occasion, black Marquina marble tables and armchairs with all-weather eco-upholstery and Canaletto walnut wood legs welcome guests.
AcquaRoof is currently open for cocktails from 6-8 p.m. nightly, with dinner service from 7-11 p.m. Breakfast and lunch service will begin soon, as will mixology lessons and cooking classes with recipes from Acquolina, the hotel’s Michelin-starred restaurant.
