La Fantaisie, operated by family-owned Leitmotiv hotel group, will open its doors in the Faubourg-Montmartre neighborhood in Paris' 9th arrondissement on June 15. Historically, the market street draws its name from 16th-century gardeners, brothers Jacques and Jean, who owned the Clos Cadet and supplied the court with fruit and vegetables. Today, with its secret garden, La Fantaisie builds on this heritage to offer a new tranquil haven.
La Fantaisie will be under the culinary direction of Dominique Crenn—for whom this will be her homecoming, having spent her career in the U.S. since the 1980s. Crenn is renowned for having transformed Californian gastronomy to the point of becoming the first—and only—female chef to be awarded three Michelin stars in the States. Her vision is centered wholly around local and sustainable products, and her cuisine at La Fantaisie will adopt a zero-plastic and zero-waste philosophy. The menu at the hotel’s flagship restaurant, Golden Poppy, will offer such dishes as turbot ceviche with spiced parsnip milk and leche de tigre. Inspired by an antique garden greenhouse, Golden Poppy’s glass roof will connect the restaurant to the natural world outside, creating an atmosphere synonymous with Crenn’s restaurant in San Francisco.
La Fantaisie is being designed by Swedish designer Martin Brudnizki. The hotel’s 63 rooms and 10 suites have been designed to provide a total disconnection from the hustle and bustle of the urban environment outside. Rooms have upholstered seats, lavish headboards and ornate walls and ceilings covered with floral wallpaper.
La Fantaisie’s spa will adopt a holistic approach inspired by ancient healing rituals and the power of underground springs. Selected as the hotel’s exclusive spa partner, French brand, Holidermie advocates a unique, naturally vegan approach and a commitment to effective, simple, and radiant beauty.
