Las Ventanas al Paraíso, A Rosewood Resort announced an exclusive collaboration with plant-based lifestyle brand Bonberi in the form of a “nourishing culinary pop-up” at the Los Cabos resort. Working alongside Diego Stefan, executive chef of Las Ventanas, Bonberi founder and plant-based recipe developer Nicole Berrie has designed customized dishes that blend vegan delicacies with the flavors of Mexico. Launching this month, the year-long pop-up will provide guests with a variety of gastronomic experiences throughout their stay.
Since its debut in 2018, Bonberi has become one of the most popular health-conscious markets in New York City.
Guests can start their day at the resort’s Sea Grill, known for fresh fares and located at the sand’s edge with the Sea of Cortez as its backdrop, enjoying the Green Goddess Smoothie Bowl filled with fresh fruits and Bonberi grain-free coconut granola followed by the signature Dulse Caesar Salad for lunch. At dinner time, the Brussels Tacos with Creamy Vegan Elote Salad is not to be missed, topped off with a Passion Fruit Coconut Milk Crème Brulee for dessert. For those looking to enjoy the Bonberi experience poolside, signature smoothies, juices and dishes will also be available, including the Avocolada smoothie made with avocado, pineapple, coconut meat, coconut water, lime and vanilla and a Vegan Coconut Ceviche. Meanwhile the resort’s tiki hut, located on the beach, will serve Bonberi Popsicles.
Wellness journeys will be enhanced even further at The Spa at Las Ventanas with Bonberi dishes such as Nori Chickpea Tuna Rolls made with nori, sprouts, avocado, tomato, romaine, chickpea tuna and a spicy raw cashew aioli, and served with pickled shaved cucumbers. A fresh Bonberi juice such as the “Drink the Sun,” made with kale, celery, fennel, cucumber, ginger, and lemon, complete the spa meal.
Tip: In conjunction with the launch, Berrie will lead cooking classes in the resort’s Herb Garden.
Las Ventanas al Paraíso continues to operate with enhanced safety and hygiene protocols, abiding by “Commitment to Care,” Rosewood Hotel Group’s global health and safety program, and “Punto Limpio,” a set of guidelines from the Secretary of Tourism, Economy and Sustainability (SETUES) of the Baja California State Government.
