The Renaissance Pattaya Resort & Spa is introducing its new culinary team, as the resort is scheduled to open this September.
The kitchen will be led by Martin Bower as he accepts the post as director of culinary. He has experience from in kitchens around the world, and most recently worked at the Crimson Hotel Filinvest City in Manila as the executive chef. At his side will be Kankamol Mongkolmit, the resort’s executive sous chef. Known for her knowledge of Thai cuisine, she has more than 30 years of experience under her belt from working at hotels and resorts throughout the region. She previously acted as a chef ambassador for Starwood, where she traveled internationally to promote and showcase Thai cuisine. The third member of Bower’s team is Indian chef Arvind Negi, who will bring authentic Indian flavors to one of the resort’s restaurant, 609 Kitchen, as well as the Renaissance Pattaya’s banqueting facilities.
Directing the dining and services show is Hamza Cofi, a graduate from the Swiss Hospitality Management School, Les Roches. Cofi has accepted the position as director of food and beverage, and has previously held several posts throughout Europe, the Middle East, Africa, the United States and Asia. Before joining the Renaissance Pattaya team, he worked at SALA Hospitality Group, where he was the food and beverage manager.
Aside from the 609 Kitchen, the resort will also offer guests the Pebbles Bar and Grill and The Deli. The menu at the Pebbles Bar and Grill will offer fine cuts, locally sourced seafood, as well as an array of cocktails and a wide selection of wines and beers. The Deli will offer guests coffee-based drinks, fresh pastries, and salads and sandwiches. The 609 Kitchen will serve breakfast and meals throughout the day and offer a selection of buffet items and an a la carte menu.
