Palazzo di Varignana has announced the expansion of its Ginkgo Longevity Restaurant program for 2025, introducing new immersive experiences such as a curated Five-Course Longevity Tasting Experience, Longevity Cooking Classes and a menu inspired by nutraceutical synergies. These offerings provide a comprehensive approach to functional nutrition, promoting longevity and wellness through evidence-based culinary practices. These new experiences invite resort guests, retreat participants and the broader public to explore the science of longevity through food—from transformative experiences for adults to gourmet children’s menus and Junior Chef experiences.
Inspired by nature, the Ginkgo Longevity Restaurant is based on the Acquaviva Method, developed by Dr. Annamaria Acquaviva, scientific director of Palazzo di Varignana.
New for 2025, Gingko’s Five Course Longevity Tasting Experience is a gastronomic journey inspired by the Five Pillars of the Acquaviva Method. Each of the tasting paths—Pure Boost, Turn Back Time, Beyond Time, Moonlight Harmony and Vital Glow—is paired with a tailored elixir and structured to stimulate both body and mind. This immersive ritual is rooted in Dr. Acquaviva’s clinical research and experience with patients as a pharmacist and dietician.
Longevity Cooking Classes and Mindful Lunches, which include a signature three-course experience guided by Dr. Acquaviva herself and concluding with a blindfolded tasting, invite guests to explore the link between food and wellness in an interactive, experiential setting. These practical sessions teach everything from savory recipes to functional desserts, exclusive elixirs making, and smoothies’ preparation, tailored to individual needs—including skin type.

Gingko Longevity Restaurant serves seasonally updated dishes that nourish the body, support immune health, and elevate vitality. The flavorful new functional menus for summer 2025 are a team effort, drawing upon Dr. Annamaria’s expertise and the creativity of Palazzo di Varignana’s chefs, showcasing a combination of superfoods and nutraceutical compounds that support longevity, stimulate metabolism, support immune function, reduce oxidative stress, fight inflammation and enhance cognitive performance. Gluten-free, dairy-free and free from added sugars and refined flours, the ingredients are rich in polyphenols, vitamins and minerals, prepared using techniques that maximize nutrient bioavailability, following the MIND diet for cognitive support and FODMAP for digestive comfort. Signature dishes include Orient-scented Wave Gnocchi, Revealed Citrus-scented Salmon and Longevity Praline with avocado and 70 percent dark chocolate.
A signature innovation for 2025 includes Gingko’s Longevity Elixirs, personally crafted by Dr. Acquaviva, which are non-alcoholic functional beverages paired with specific dishes to enhance nutrient absorption and amplify health benefits. Drawing inspiration from ancestral wellness traditions and family galenic recipes, these drinks elevate the dining experience. Options include the Purple Goddess (elderberry and pomegranate), which supports cardiovascular and cognitive function, Golden Milk (curcumin and black pepper), which enhances anti-inflammatory effects, and Green Whispers (matcha tea and almond milk), which boosts polyphenol uptake in desserts. The Alchemical Beverage Menu also includes functional waters, smart drinks, infusions, tisanes and a selected wine list, thoughtfully curated in reference to the Blue Zones—world regions noted for longevity. While wine is offered in moderation, in alignment with Mediterranean tradition, guests are encouraged to make mindful choices, guided by the science-based principles of the Acquaviva Method.
