Following suit on a year-long celebration of its 60th anniversary, Rome Cavalieri, A Waldorf Astoria Hotel has announced the commencement of a significant renovation to its restaurant, La Pergola. The first and only restaurant in Rome to be awarded a three-star rating by the Michelin Guide, in recognition of the talents of Chef Heinz Beck, La Pergola will undergo a complete transformation, debuting a refreshed gastronomic experience this spring to coincide with the restaurant’s 30th anniversary.
Anchoring the renovation will be a completely redesigned dining room by the design studio Jouin Manku, headed by the design and architecture duo Patrick Jouin and Sanjit Manku. Inspired by the historic hotel’s significant architectural design, Rome’s timeless style and La Pergola’s panoramic city views from its rooftop perch and terrace, Jouin Manku has developed a new setting for the restaurant, incorporating elements such as arches and columns, carved ornaments, terracotta shades and ancient marble.
The redesigned restaurant will provide a new stage for Chef Heinz Beck to continue to showcase his creations. Chef Beck presents unexpected dishes inspired by the flavors of Italian and Mediterranean cuisine. Each creation represents a visually stunning and balanced presentation and is the result of a meticulous analysis of every aspect of its components.
La Pergola further rose to prominence for its wine cellar, under the care of Chef Sommelier Marco Reitano, who has methodically grown the La Pergola Wine Cellar to more than 76,000 bottles. The collection includes the world’s finest vintages and some of the rarest Italian and international selections.
