Rosewood Mayakoba, a resort located in Mexico's Riviera Maya, is introducing a new gastronomic experience: Aqui Me Quedo. Translating to "Here I Stay," Aqui Me Quedo offers guests a casual ambiance and a Caribbean-coastal menu including items like chilled coconut cocktails and "citrus-laced ceviche."
Joining the resort's collection of restaurants, including Casa del Lago, Le Ceiba Garden and Kitchen, Punta Bonita and Agave Azul, Aqui Me Quedo boasts a new approach to Riviera Maya fare. Curated by Executive Chef Juan Pablo Loza, the menu offers antojitos, or "snacks," and a selection of memelas, which are hand-made oval tortillas. To compliment the menu, refreshments include local beer, mojitos, rose wine, mezcal and tequila.
Each culinary property at Rosewood Mayakoba is inspired by a different expression of the Mexican gastronomic journey. Aqui Me Quedo draws on the relaxed vibe of beach-side cantinas found along Mexico's Caribbean coast. The food is cooked in a vintage truck and served in lounge-style seating underneath a canopy of palm trees.
Aqui Me Quedo is open daily from 12 p.m. to 7 p.m. for adults only (18+) with a $100 minimum food and beverage consumption per person. Guests staying at Rosewood Mayakoba can make reservations directly through the resort.
Rosewood Mayakoba sits on 1600-acres of resort property in the Riviera Maya. The hotel offers 130 suites with private plunge pools, rooftop sundecks, garden showers, and individual docks. Resort amenities include a championship golf course and A Rosewood Spa. The resort is built to abide by eco-standards and has recently been awarded the Rainforest Alliance Certification.
