Rosewood Washington, D.C. Reopens With New Dining, Public Spaces

Rosewood Washington, D.C., located in the heart of Georgetown, has reopened with new dining concepts by Wolfgang Puck, including CUT D.C. Additionally, the hotel debuts its newly revamped rooftop lounge, CUT Above, and redesigned public spaces, including the lobby and library. Later this year, it will debut new townhouse suites.                                     

CUT D.C.

Helmed by executive chef Andrew Skala, a veteran of the Wolfgang Puck brand, the restaurant has a vegetable- and seafood-centric menu. Sourcing ingredients from local ranchers, farmers and fisherman, dishes will highlight the best of the surrounding area, including Sweet Corn Tortelloni with Kewsick Creamy ricotta and marjoram, Virginia Black Bass with baby artichokes, basil pistou and nantes carrots and Grilled Whole Wild Turbot with saffron-charred fennel vinaigrette. A selection of signature wagyu and dry-aged cuts of beef and offal cuts, including Wagyu Beef Heart “a la plancha” with nam jim, cucumber, lime and coriander, remain available for CUT’s steak-seeking guests. Lighter options will be available for lunchtime.

The property’s new bar has an extensive cocktail and wine list with offerings from several local vineyards and distilleries. Exclusive options include a private-label rye whiskey from Catoctin Creek Distillery and a 100 percent Chardonnay from Thibautt-Janisson. Other highlights include a dedicated Negroni menu with five different concoctions, as well as a roving beverage cart serving Old Fashioneds made-to-order. Fun fact: The bar will have 2,500 bottles from around the world. There will also be a 14-seat private dining room situated on the floor below CUT D.C.

CUT Above

The hotel’s new rooftop bar and lounge, CUT Above, is outfitted with plush and modern lounge furniture. The menu will include Maine Diver Scallops with celtuce, West Virginia peach and lemon balm, and a Hardwood Grilled ‘CUT Burger’ with jalapeño marmalade and aged Vermont cheddar on a brioche bun. 

Seating is offered on a first-come, first-serve basis.

Redesigned Public Spaces

Rosewood Washington, D.C.’s new public spaces include a reimagined lobby and library, each designed by Jacques Garcia. Wood paneling, antique mirrors and marble fireplace, line the lobby and its corridors. The residential-style design is further reflected in the library, where there is a double-height ceiling, velvet sofas and armchairs and a chandelier.

New Townhouse Suites

In addition to the new dining venues and public spaces, Rosewood Washington, D.C. is set to debut six new townhouse suites later this year. Built at the turn of the century and situated along one of Georgetown’s picturesque streets, the accommodations will offer an entirely residential guest experience. Each, approximately 1,100 square feet in size, will be designed by local interior designer Thomas Pheasant and will have an entrance, dedicated living space, fully equipped kitchen and a private back courtyard, in addition to custom furnishings and décor by local artisans.
