Ocean House, a Relais & Chateâux property in Watch Hill, RI, has added two to its culinary team: Erin Swain as the director of wine education and Ryan Beaudoin as the director of culinary education/food forager.
As the director of wine education, Erin Swain will oversee the Wine Spectator award-winning, 8,000-bottle inventory at both Ocean House and its sister property, Weekapaug Inn. She will also organize the wine curriculum at the Center for Wine & Culinary Arts. Swain comes to Ocean House from Gurney’s Montauk Resort & Seawater Spa in Montauk, NY. As the resort’s sommelier/manager, Swain spearheaded efforts to refresh the wine program with a new inventory and wine cellar. Prior to that she was sommelier at Nick & Toni’s in East Hampton, NY.
Beaudoin’s role as Ocean House’s director of culinary education and food forager will enable him to work closely with regional purveyors to curate the resorts’ restaurants and programs at the Center for Wine & Culinary Arts. Beaudoin will lead interactive cooking classes for guests throughout the year, including “Gluten-Free Cooking” and “Oyster and Clams: Tasting and How Tos.”
In other culinary news, Vincent Wallez has been named executive chef of Grand Velas Los Cabos. In his new position, he oversees the resort’s dining offerings, catering, 24-hour room service, pool and beach-side dining, and more. Wallez has spent 14 years in the culinary field, most recently as the executive chef of NIZUC Resort and Spa in Cancun, and prior to that, he was held the same title at Belmond La Samanna on St. Martin. He is originally from Bayonne in southwest France and has spent time in the kitchens at the Bristol and Plaza Athénée hotels in Paris.
The JW Marriott El Convento Cusco, has appointed Heival Beodya as executive chef. In his new role, Chef Bedoya is leading daily food and beverage operations, menu conceptualization and staff management, among other duties, while implementing new culinary programming and concepts in line with the latest industry trends. The Peru native has previously worked at JW Marriott Lima.
Jupiter Beach Resort & Spa has added Justin Earle to the role of general manager. The hospitality professional brings more than a decade of experience to the area’s only oceanfront resort, where he will be responsible for overseeing daily operations and employee management while ensuring overall guest satisfaction. Earle began his hospitality career in 2005 as an operations manager of The Westin Key West Resort & Marina. Since then, he’s held managerial positions at properties and hotel brands across the state of Florida, including the Delray Beach Marriott, Sunset Key Cottages in Key West and Hollywood Beach Marriott.
