Viceroy Zihuatanego has recently announced the appointment of Jorge Ildefonso as executive chef. In his new role, Ildefonso will be responsible for the resort's restaurants, bars and catering. Chef Ildefonso comes to Viceroy Zihuantanejo with more than 12 years of culinary expericence in hotels and resorts in Mexico. Most recently, Ildefonso held the position of executive chef at the Viceroy Riviera Maya.
At La Marea, Viceroy Zihuatanego's signature restaurant, Ildefonso will be orchestrating a new 'Sea-to-Table' dining concept that takes advantage of the fresh seafood brought in daily by the town's fishing fleet, with fruits, vegetables and herbs sourced from local farmers and organic when available. Chef Ildefonso is also responsible for La Villa restaurant, which offers contemporary interpretations of Pacific-Mexican cuisine in a casual, beachfront atmosphere; the new Marea Sushi & Ceviche, the first and only sushi and ceviche bar in Zihuatanejo; and weddings and banquets.
Ildefonso's previous experience includes serving as the Chef de Cuisine, Hotel Grand Luxxe, Nuevo Vallarta; Executive Sous Chef, Hotel Villa del Palmar, Loreto; and Chef de Cuisine, The Grand Mayan Hotel, Los Cabos. He earned a Sous Chef designation from the Uniglobal Universidad Interamericana de Puerto Rico in 2007.
Viceroy Zihuantanego is nestled on Playa la Ropa on Zihuatanejo Bay. The two-story casistas house a total of 46 suites and guestrooms and offer access to 600 feet of coastline.
