The Resort at Paws Up has announced a lineup of culinary events this fall on its 37,000-acre working cattle-ranch backdrop. Guests can immerse themselves in cuisine from the country’s top flavor-makers, paired with wine, beer and spirits and accompanied by bucket-list outdoor activities.
That said, there are still a few foodie happenings to close the summer season, starting with “Bounty on the Blackfoot” on August 19. The one-night-only farm-to-table feast is created by “Top Chef” and “Tournament of Champions” winner Chef Brooke Williamson. Guests can also enjoy live music, the crisp Montana air and get to know the folks behind the meal. The featured distiller is Spotted Bear Spirits from Whitefish, MT.
Late-summer and early-fall travelers will also have the chance to dine at Paws Up’s new seasonal restaurant, Shed. Guests can enjoy favorites such as brisket, smoked trout salad and pit baked beans in the al fresco setting complemented by a full-service bar.
Festivities at the resort will ramp up in September and throughout the fall. These include:
- “Fish and Feast” (September 1–3) – Guests can spend their mornings battling cutthroat and rainbow trout fly-fishing excursions on the Blackfoot River. Then, the visiting chefs will head into the kitchen to showcase their cooking skills. These chefs include Chef Matt Carter of Scottsdale, AZ’s Fat OX, The Mission and Zinc Bistro and Chef James Porter of Prescott, AZ’s Terra Farm + Manor.
- “Montana Master Chefs: North Carolina” (September 21–24) – This three-day foodie weekend brings wine pairings provided by Hundred Acre from St. Helena, CA, along with craft beverages, live local music and outdoor adventures. This year’s North Carolina talent all have James Beard Foundation ties, including five-time James Beard Award semifinalist Chef Scott Crawford, James Beard Foundation Host Chef William Dissen, James Beard Award semifinalist Chef Dean Neff and James Beard Award semifinalist Chef Annie Pettry.
- “Friends of James Beard Weekend” (October 13–15) – Guests will attend a Friday cocktail party to meet the chefs, nosh on native bites and sip on wines. On Saturday, the chefs—including Chef Karen Akunowicz, Chef Tanya Holland, Chef Cassie Piuma and Chef Krystle Swenson of The Resort at Paws Up, a two-time James Beard Award semifinalist—will collaborate to plate inventive dishes.
- “Opus One Wine Weekend” (November 3–5) – Opus One winemaker Michael Silacci returns to Paws Up to demonstrate his knowledge of terroir and differentiating factors of vintages. Guests can expect Opus One wines worthy of 92-plus ratings and pairings with bites from Paws Up’s team of chefs.
